Coconut Flour Pancakes1
Ingredients
- 1/4 cup coconut flour
- three large eggs
- 2 tbsp of olive oil
- 2 tbsp of maple syrup (or sugar-free syrup for keto)
- 1 tsp. baking powder
- a tsp vanilla extract
- 1/8 teaspoon sea salt, fine
INSTRUCTIONS
In a large bowl, combine coconut flour, eggs, oil, maple syrup, baking soda, vanilla extract, and salt. Mix everything with a whisk to break up lumps. Add 3 tablespoons of pancake batter to a greased skillet over medium-low heat and cook until foam forms in center of pancake, about 4-5 minutes. Flip pancakes and bake other side for about 4 more minutes or until golden brown on both sides. Don’t try to raise the heat to speed up the cooking time. Otherwise, the outside of the pancake may burn before the inside is fully cooked and fluffy.
Repeat with remaining dough to make about 6 small pancakes (about 5 inches in diameter). Serve warm with your favorite toppings. Leftover pancakes can be stored in an airtight container in the refrigerator for up to 3 days.

My low carb coconut flour waffle recipe is extremely simple (everything is simply blended together!) and only takes 5 minutes to prepare. Breakfast has never tasted so good.
Making Coconut Flour Waffles
These coconut flour waffles are ready in just 10 minutes! Here’s how we do it:
Warm up your waffle maker. When you put the keto coconut waffle batter in the waffle maker, it should be hot.
Make the batter with coconut flour. Until smooth, combine coconut flour, eggs, cream cheese, butter, heavy cream, erythritol, baking powder, xanthan gum, and vanilla.
Allow the batter to thicken. Let it stay for like 5 min before starting to use the batter.
TIP: If the batter is crumbly, like cookie dough, add a tablespoon of milk or cream at a time until it’s thick.
Make waffles. Scoop 1 cup batter into the waffle maker, spread it out, and cover it. Cook according to the package directions.
TIP: Coconut waffles are done when steam no longer escapes from the waffle maker’s sides.
Use up any leftover batter. Repeat until there are no more.
TIP: For crispier waffles, heat them in the oven for a few minutes on an oven-safe cooling rack at 400 degrees F. You could also put them in the toaster, but wait for them to cool enough to stand up in there.
Coconut Flour Vs Almond Flour
Both coconut flour and almond flour are excellent choices for baking or cooking. However, as mentioned in several of these recipes, coconut flour is a healthier option because it has more carbs and less fat. It does, however, have fewer calories, whereas almond flour has more vitamins, minerals, and protein. In baking, coconut flour requires more eggs to achieve the desired texture and consistency, whereas almond flour spreads more like a grain-based flour.
